New hotels in Australia: Sydney, Perth, Adelaide, and Cairns are about to embrace a new wave of luxury

Spring has arrived in Australia, which means charming streets of flowers in bloom and a few months of perfect, mild weather. This means our chic coats and frizz-free tresses are in play, both legitimate reasons to make a trip to the land Down Under. Another reason to go? Australia is getting an enviable slew of new hotels, ranging from major luxury brand names to its own breed of elegant boutique hotels. In fact, one of these includes a renowned local brand's first international foray. They've come a long way from the Mercures and Ibises — or if you're in luck, casino hotels — that defined every family holiday in the last couple decades. Regular holidaymakers will certainly notice the difference.

The Fullerton Hotel Sydney

Prestigiously located in Martin Place in a former General Post Office (GPO) building, The Fullerton Hotel Sydney is a significant move for the Singaporean brand, The Fullerton Hotels and Resorts — as it marks its first property out of Singapore. Set in Sydney's CBD, the hotel is a stone's throw away from the city's tantalising mix of culture and arts, range of retail stores, and a brilliant restaurant and bar scene. Lauded for their ability to showcase local flavour, The Fullerton Hotel Sydney will offer complimentary heritage tours as part of Fullerton Experiences, a bespoke programme that allows guests to discover a different side of the city they are in.

The Fullerton Hotel Sydney will open its doors on 18 October 2019.

The Ritz-Carlton, Perth

Perth is certainly getting a makeover of a lifetime. Western Australia's capital is reputed for its exquisite rugged landscape and glimmering waters, but a luxury hotel scene is putting it in the limelight for a different reason altogether. There was much fanfare when Como Shambhala Urban Escape set foot in Perth in 2016, and The Ritz-Carlton, Perth is about to do the same next month. The building will pay homage to the history, culture, and natural beauty of Western Australia, with 10,000 pieces of handpicked Kimberley sandstone adorning the building exterior and the lobby. Its food will be another reason to visit — Hearth, the hotel's signature restaurant which embraces cooking over a roaring flame, and Songbird, its rooftop bar, will deliver refined dishes celebrating Western Australia's freshest produce.

The Ritz-Carlton, Perth will open its doors on 15 November 2019.

Sequoia at Mount Lofty House

Travellers seeking a spot of discreet extravagance will find its match in Adelaide Hills' Sequoia at Mount Lofty House. Located amidst the glorious highlands, you're ensured a spectacular view in the morning replete with the sweet smell of nature soaking the air. Promising a six-star experience with unrivalled decadence, the $15 million lodge will feature 14 guest suites with access to a private club lounge, gardens, sundeck, and heated infinity pool. Expect highly personalised service and bespoke experiences, such as private behind-the-scenes tours with local winemakers — all in delicious remoteness.

Bailey

When Riley opened last year, it marked a joyous new beginning with the first new five-star property in Cairns in the last 20 years. Soon enough, there will be Bailey, its sibling property under the Crystalbrook Collection. Lauded for being the thoughtful, arty one, the hotel is a dream for creatives who thrive on handcrafted furniture, pops of colour, and the finer details in life. Perched in the heart of Cairns' flourishing cultural precinct, each of the 12 guest floors is home to a different artist, with regularly rotating art. Keep your eye out for their art initiatives, such as exhibitions, poetry recitals, and live graffiti sessions. Your artist soul will be satisfied.

Bailey will open its doors on 2 November 2019.
