Odette's Julien Royer to open Louise in Sheung Wan, Hong Kong this June 2019

You might think being recently crowned Asia's No.1 chef and having a 2-Michelin restaurant under his belt would be enough for chef-owner of Odette, Julien Royer. But no — the man isn't one to rest on his laurels. In fact, his next project is dropping real soon — on the cool streets of Sheng Wan in Hong Kong. Her name is Louise, and she's a collective brainchild of Royer as well as hospitality house, JIA Group.
Doing what he does best, the two-storey restaurant will feature a fresh approach on French classics in a stunning heritage building marked by the hands of renowed architect, Andre Fu and his studio, AFSO. The space will comprise of two concepts: Casual all-day dining and tipples in the Tropical Greenhouse Lounge as well as a finer approach at the Ivory Boudoir room upstairs, where lunch and dinner are served à la carte.
All ingredients are personally procured by Royer from farmers and producers, eschewing the possibility of cutting corners in this seemingly pared-down venture. Expect a menu of surprises, varying to be slightly different from Odette — Royer went back to his roots by unravelling recipes like sautéed potatoes with cheese, garlic and black truffle, red wine braised beef cheeks and a yoghurt amalgamation in the dessert department. While in the casual lounge, you'll find treats like madelines and pate on toast. Of course, expect artisanal cheeses and a glorious selection of fine wines with well-known French classics as well as boutique wineries in the lesser-known regions in France.
Do we smell a probable Michelin star coming our way? Perhaps. But for now, reservations will be open 1 June. We'll stake our claims — stat — well before the hungry local gourmands in Hong Kong get to it.
