Coffee run: The New Black
Singapore's coffee scene has come a long way in recent years. A notable addition bringing caffeinated joy to the working warriors at Raffles Place is The New Black. Unlike the cookie-cutter cafes that deck out their interiors with mismatched furniture, The New Black has taken a refreshingly different path adorned with bright splashes of pop-art colours set against a sleek, contemporary space.
The first thing that greets you when you enter their latest cafe on the ground floor of Republic Plaza is the state-of-the-art coffee bar anchoring the space. Don't be surprised if you find former U.S. Barista Champion Bronwen Serna pulling shots behind the bar. After all, the pint-sized powerhouse has joined The New Black as their Director of Coffee and Education. Besides training the cafe's stable of baristas, Serna has also put together a large and diverse collection of coffee from some of the world's most celebrated roasters.
When asked to name her favourite brew, Serna pointed us towards the Raúl Gutierrez coffee from Casino Mocca, one of Hungary's leading specialty coffee roasters. "The beans undergo a process of lactic acid fermentation that brings out the acidity of the coffee without making it too tart," Serna explains. "I love how the coffee has flavours of rum punch and cocoa beans."
