Celebrity chef Richard van Oostenbrugge announces his first restaurant in Singapore, in place of Joël Robuchon's spot at Resorts World Sentosa
The stakes are high
Since three Michelin-starred Joël Rouchon made its unexpected exit from our shores this year , we were left wondering which major player would take its place at Resorts World Sentosa. After all, that's some pretty big shoes to fill.
The anticipated reveal turned out to to be renowned chef Richard van Oostenbrugge, who will be making his foray into Singapore with European restaurant — Table 65, this December. Yes that's our country code alright. Named by Gault & Millau as the Netherlands' Chef of the Year in 2014, van Oostenbrugge ran the kitchen of the renowned two Michelin-starred Bord'Eau restaurant in Amsterdam for seven years. Earlier this year, he opened 212 Amsterdam, a fine-casual joint, which was heralded as one of the best restaurants in Amsterdam's exciting restaurant scene While you might have caught or savoured a glimpse of chef Richard's culinary finesse when he was here last year for the second installament of Art at Curate dining series, Table 65 proves to be anything but predictable.
Instead, this establishment is all about fun. First with its innovative design — where guests can be seated around the kitchen counter; watching the action unfold while engaging in insightful conversations with the chefs at work. Traditional formalities of fine dining will be pared back with the focus on perfecting core flavours of quality ingredients. Chef van Oostenbrugge is also set on using produce from local farms in his first venture here.
Expect punchy, robust flavours in creations like veal tartare with smoked herring and bone marrow as well as barbecued chicken skin with eel cream. There's also a dedicated vegetarian menu just so no one gets left out. Also, who could forget his glorious 'Green Apple' dessert? We're talking about that sparkly transparent sugar bubble encasing a green apple sorbet within. You'll be able to see an altered version of it at Table 65.
