Taste this fried chicken recipe that is over 100 years old

The Bird has landed

Award-winning restaurant, Yardbird Southern Table & Bar, makes its first international debut on our shores. We paid them a visit to try out their Southern food offerings, as well as their famous fried chicken

Mention Southern cuisine to anyone and they immediately think of fried chicken, typically stacked atop a generous bed of mashed potatoes and peas. In other words, it's a meal where one could potentially eat their heart out at a single seating. Steering the lead of soul-healing grub is the award-winning Yardbird Southern Table & Bar (nothing to do with the Yardbird in Hong Kong), which hails from Miami and Las Vegas. This elite establishment has recently opened their first restaurant out of the US, on our shores — affectionately named The Bird.

As with most acclaimed restaurants in Marina Bay Sands, the snazzy wood-lined restaurant is sizably huge. Similar to their two branches in the US, the two-storey space is all about the finer things in life — a bar stocked full of their extensive collection of bourbons and whiskys, plush leather chairs, and wood-grained walls. The menu? Southern cuisine favourites, elevated — you'll find plates like the Fried Green Tomato BLT, a breadless sandwich topped with bacon, lettuce and fried green tomatoes, as well as their signature Lewelyn's Fine Fried Chicken, accompanied with spiced watermelon and buttermilk waffles.

The famous bird's recipe dates back to over 150 years ago and is touted as one of the best fried chicken stateside. Was it as good as it's hyped up to be? Well, it certainly had us salivating at first bite. The tender cut is first soaked in a spiced brine for 24 hours before it's coated in spiced flour and deep-fried in a cast iron skillet. The result was a perfectly moist and flavourful mouthful, married with a crisp and deliciously light batter.

That wasn't all. We were also surprised to find a dish called Low Country Laksa, The Bird's spin of our local Peranakan delight. Expect a serving of South Carolina's gold rice dredged in coconut broth, alongside a pan-fried red snapper. "We've brought some of our classic dishes that highlight Southern flavours but we are also creating new dishes that are just for Singapore, inspired by local ingredients and local flavours," says John Kunkel, CEO of The Bird.

If you're looking for satisfying hearty fare, this is it. The Bird pays homage to farm-fresh ingredients, classic Southern cooking techniques, and hospitality — while its pretty furnishings make a great environment for a Friday night out, it's their generous portions and honest plates that will have you coming back for seconds.
