Watch The Masses' Dylan Ong cook a salted vegetable duck soup and olive rice — recipe included

A hearty combo

Comfort food can be bridled down to many different intepretations. For some, it could be a bowl of carbonara, and for others, all would be well with a winning soup and rice combination. For chef-owner of The Masses, Dylan Ong — it's nothing quite French, despite what he cooks up in the professional kitchen. Instead, his go-to happens to be a salted vegetable duck soup easily whipped up in 30 minutes as well as a delicious olive rice that anyone with a microwave can recreate. Shhh, don't tell mom.

Recipe for Dylan's salted duck soup
Serves 5

Here's what you need

2.2kg Fresh Duck (extra large)
1kg Salted Mustard Green (aka kiam chye)
8 Tomatoes
3 Sour Plums
2 thumb-sized pieces of Ginger
6 cloves of Garlic
3 litres Water

How to make it

1, In a basin, put warm water to soak kiam chye (water level to be two inches above kiam chai) for 20 minutes. Taste the vegetable to see if too salty. If it is, soak for ten minutes more.
2. De-skin the duck and remove all the fats. Wash and clean the insides. Chop duck into chunks. Blanch duck chunks in boiling water for three minutes, then wash the duck again with fresh water and remove any visible blood clots. 
3. Remove kiam chye leaf by leaf and cut off fibrous part on top of leaves and main stem. Further cut up kiam chye to desired bite sizes. 
4. Wash and cut the tomatoes into wedges. Wash sour plums. Remove skin from ginger and bruise with a knife. 
5. In a pressure cooker, put in duck, kiam chye, sour plums, garlic, and ginger. Add water till everything is submerged. Put in tomatoes after 20 minutes before serving.

Recipe for Dylan's 'Hangover' olive rice

Serves 4

Here's what you need

5 slices Seaweed 
1 cob of Cooked Corn, removed from cob
2 tbspn Chinese Olive
1 tspn Vegetable Oil
4 cups of Leftover Rice  
1 tspn (light) Soy Sauce
2 large Eggs, beaten
1.5 tbspn Fried Shallots
1.5 tbspn Crushed Cashew Nuts
1 tbspn Scallions
2 tspn Garlic Oil

How to make it

Heat pan. Add eggs and make an omelette. Cook and thinly slice. 
Heat up rice in a microwave oven. Place in mixing bowl and add all ingredients above and mix well.
