4th June is upon us and pink reigns as the colour du jour. In keeping with all things pink, we're sharing a strawberry popsicle recipe that's pretty much perfect for this balmy day. Instead of the usual heavy-duty full cream milk that goes into this cool treat, we're using coconut cream and milk — the perfect tropical flavour pairing for sweet, juicy strawberries.
1. Simmer the coconut milk, coconut cream, and strawberries with 100ml of water over a low heat, stirring continuously, until they are evenly mixed. 2. Take the mixture off the heat and leave it to cool. 3. Pour the mixture into four popsicle moulds and freeze overnight.
