There's nothing quite like the Bacardí Legacy Cocktail Competition to get bartenders shaking up all manner of creative cocktails. This year, over 50 aspiring bartenders in Singapore battled it out at the bar. Only six impressed the judges enough to make it through to the finals, one of whom is Manhattan bar's Senior Bartender, Cedric Mendoza. Below, the cocktail recipe that launched him to the fore of the competition.
Here's what you need
45ml Bacardi 8
20ml House-made Earl Grey Tea Syrup
20ml Lemon Juice
4 dashes Walnut Bitters
How to make it
1. To make the Earl Grey tea syrup, boil one part sugar and one part water for one minute. Add 1/4 cup of earl grey tea for every 500 ml of simple syrup and boil for 3 minutes. Set aside and leave to cool.
2. Pour Bacardi 8, Earl Grey tea syrup, lemon juice, walnut bitters, and lager in a cocktail shaker. Top with ice and shake all ingredients to combine them before fine-straining the mixture into a chilled cocktail coupe. Garnish with orange peel.
