How to make delicious pesto pasta

Whip up a hearty Italian favourite for the weekend

Whenever you're at an Italian restaurant, there's the constant dilemma of having to choose between a heavy cream or tangy tomato base. When those options don't feel right, you can always count on pesto, a perfect balance of aromatic and refreshing flavours packed with a herby combination of garlic, basil, cheese and pine nuts. Below, chef-owner of SPRMRKT Kitchen & Bar Joseph Yeo, shares how you can create your very own Italian pesto special at home, to serve a party of five. Your dinner circle will leave with happy hearts and stomachs. 

Pesto: Here's what you need

30g Pine Nuts
100g Basil Leaves
1kg Ice Cubes
80g Corn Oil
10g Garlic
20g Parmesan Cheese, grated
5g Salt
5g White Pepper

Pesto: How to make it

1. Preheat the oven to 180°C using the convection 'fan mode'.
2. Toast pine nuts for approximately 6 minutes till they turn slightly brown and fragrant, then set them aside.
3. Boil water in a medium sized pot, and add salt.
4. Upon boiling, blanch the basil leaves, then chill them in a bowl with ice cubes and water.
5. Squeeze excess water from the basil leaves, then blend in a processor with corn oil, toasted pine nuts, garlic, cheese, salt and pepper till it forms a paste.

Pasta: Here's what you need

500g Desired Pasta Type
2tbspn Cooking Oil
5g Garlic, chopped
20g Parmesan Cheese, grated
10g Garlic
1 pinch of Rock Salt
1 pinch of Black Pepper
1 tpsn Extra Virgin Olive Oil

Pasta: How to make it

1. Boil water in a medium sized pot and add salt. 
2. Add pasta once the water boils, and cook the pasta accordingly.
3. In a slightly heated medium sized pan, add cooking oil and light fry the garlic.
4. At this point, turn down the heat for the pot to allow more time to cook the pasta till it almost reaches the desired cooking timing.
5. When the pasta is left with about a minute to being fully cooked, add 5 tablespoons of pesto mixture to the pan and mix evenly with the garlic.
6. After the pasta is cooked, strain and toss it together with the pesto in the pan. Add some liquid from the pasta water if you want more moisture.
7. Garnish with cheese, parsley, olive oil, rock salt and freshly cracked pepper.
