New year. New tradition. Here at Buro 24/7 Singapore, we're thrilled to kick off a new culinary video series fronted by radio presenter Rosalyn Lee (but you can call her Rozz). For the inaugural episode of this no-holds-barred homage to food and the personalities driving our food scene, Rozz has roped in Lennard Yeong, a familiar face from MasterChef Asia, to lend his culinary chops. As it turns out, this engineer and self-taught homecook makes for a pretty good teacher as well. Here, he shows us how to dish up fish en papillote, essentially fish — in this instance, sea bass — cooked in a paper bag crafted from parchment paper.
