Business in the front, party in the back is what defines the sultry Italian bar at InterContinental Robertson Quay

By day, this furtive space goes by a lively breakfast persona — Publico Deli, which some of us have already been well acquainted with. By night, the lights dim down as thick velvet curtains rain down to unveil Marcello, the sexiest craft bar in the charming neighbourhood of Robertson Quay.

Wander through the front doors and down the lift lobby of InterContinental Robertson Quay, and you'll find Marcello. There's a certain alllure and mystery, which sets the narrative for the cosy Italian establishment — think plush booth seats and high tables awash in inviting colours of deep purple and tanned brown. Marcello's main attraction is a bar that comes with a dapper bartender, and a wall cabinet replete with a holy grail of liqueurs and various spirits.

Their cocktail menu here is sublime and spot-on — it boasts the best of modern Italian drinking with high-quality craft spirits and special ingredients sourced from Italy. Make sure to call for the Smoked Black Olive Negroni as well as Cinema Paradiso, a tasty creation of gin, citrus, agave and chinotto. To wash the alcohol down, order a hot side of their Truffle Aranici, essentially fried risotto balls stuffed with mushrooms and truffle oil. Other great bar bites include their Charred Octopus and Stuffed Dried Dates.

Marcello isn't just another drinking hole to get your tipple fix at, but an outlet to educate local imibibers on Amaro, an Italian herbal liqueur commonly consumed as a post-meal digestif. Unlike spirits like gin and whiskey, most of us aren't familiar with the delicious Italian liqueur — and with a current standing of holding the largest collection of Amari in Southeast Asia, Marcello is the perfect place to start. Their extensive liquor offerings comes with alcohol content that ranges from 16% to 40%, while its notes scale from sweet to caramel to bittersweet. Ready for a refreshing drink that will kill all Monday blues? A glass of Amaro might just do it.
