How to make delicious kimchi fried rice
You don't even have to try (too hard) with this meatless recipe, provided from Gemma Davis and Tracy Noelle's cookbook The Compassionate Foodie for Meat Free Week 2018. All you need is some leftover rice, x no of vegetables you can find in your fridge and obviously kimchi. The result will ultimately be a piquant bowl to sate your afternoon appetite.
Kimchi fried rice: Here's what you need
2 cups Jasmine Rice
1 tbspn Coconut Oil
5cm of Ginger, peeled and grated
1 tspsn Sesame Oil
1 cup Kimchi
1 cup Fresh Peas
½ cup Tamari
2 Spring Onions, sliced on the diagonal
Kimchi fried rice: How to make it
1. Cook the rice or quinoa according to the packet instructions and set aside to cool completely.
2. Heat the coconut oil in a wok or large frying pan over medium heat and gently cook the ginger for one minute or until fragrant.
3. Add the rice, sesame oil, kimchi, peas and tamari. Cook for 3 minutes or until heated through. Top with spring onion to serve.
