How to make delicious chicken tortillas

Try your hand at this mouth-watering Mexican favourite this weekend

If there's anything we've learnt so far in our experiences at house parties? The guac dip is always an instant crowd favourite. This weekend, take your avo situation up a notch by cooking up a platter of chicken tortillas — thanks to this recipe from Mexican restaurant, LES45. This rendition comprises of a tangy mango guacamole and tomato chilli shredded chicken atop of a crisp tortilla. Feeling extra indulgent? Top it off with a fried sunny-side up. Don't worry, no one's counting on you to share. 

Note: Prepare mango guacamole before starting on the chicken tortillas
*Serves 2-4 

Mango guacamole: Here's what you need

1½ Avocado
2 tbspn White Onion
6 tbspn Tomatoes
2 tbpsn Coriander
4 tbspn Mango
15ml Lemon Juice
1 tpsn Salt
Garlic Oil

Mango guacamole: Here's what you need

1. Cut the tomato, onion, mango in cubes and chop the coriander.
2. Cut the avocados in half and remove the bone with a knife, and use a spoon to remove it from the skin.
3. Mash the avocado in a bowl. Mix all the ingredients in the bowl, and add some garlic oil and lemon juice.
4. Season with salt and pepper.

Chicken Tortillas recipe

Chicken tortillas: Here's what you need

400g Shredded Chicken
30g White Onion
5g Coriander
8 pieces of Corn Tortillas
8 Eggs
1 Tomato
10g Garlic

Chicken tortillas: How to make it

1. Chop the tomato, onion, coriander and garlic. Sauté in a pan with olive oil, garlic, veggies, shredded chicken and add in some chicken stock.
2. Season it with salt and pepper. If you want it spicy, you can add in some chopped chilli.
3. Deep dry the tortillas until they are crunchy and place the tortillas on the plate. Spread the guacamole on the top of the tortillas and add in the chicken.
4. Pan-fry a sunny side egg and place it above.
