How to make a delicious power salad
As gratifying as all the festive feasting can be, we have to admit that it can take a toll on our waistline. But not to worry, there's still time to salvage the situation. To get back onto a healthy diet, incoporate power salads into your everyday meal prep — we don't mean a bowl packed with limp watery lettuce but one that's filling, fueled with protein, and rich in fibre and nutrients. How to make a power salad: Here's what you need
1.5 cup of Mixed Baby Lettuce
1/4 cup Broccoli Florets
1/4 cup Sliced Mushrooms
1/4 cup Cauliflower Florets
1/4 Avocado, sliced
1/8 cup Carrot, shredded
1/8 cup Zucchini, shredded
1/8 cup Yellow Squash, diced
1/4 cup Apple, thinly sliced
1/8 cup Raisins
1/4 cup Mozzarella Cheese
2 tbpsn Sunflower Seeds
50ml Orange Juice
50ml Olive Oil
How to make a power salad: How to make it
1. Mix the olive oil, orange juice and honey together in a small bowl, season with salt and pepper to taste.
2. Place the remaining ingredients in a bowl.
3. Add the dressing prepared in the first step, then toss before serving.
