#SaturdaySessions: Bob's old fashioned
It's big, bold, and fuelled by plenty of rum

The old fashioned is one of those drinks that never goes out of style. It might be the king of whisky cocktails, but over at Bob's Bar in Capella Singapore, you won't find a trace of whisky in it — and that's not necessarily a bad thing. Here, rum takes centrestage, lifting the old fashioned from the highlands of Scotland and dropping it straight into the balmy breezes of the Caribbean.   


Here's what you'll need
Serves 1 

50ml Plantation XO 20th anniversary rum
5ml Sugar syrup
5ml Homemade allspice dram
0.1ml Angostura bitters
A strip of fresh orange peel

For the homemade allspice dram
(Makes 500ml)

125ml Plantation 3 Star White Rum
125ml Plantation Overproof Rum
190ml Brown sugar
375ml Water
60ml Allspice berries
1 Cinnamon stick

How to make it

1. Prepare the homemade allspice dram two weeks in advance. To do so, muddle the allspice berries in a glass jar, add both rums required for the dram to the mixture, and allow the mixture to stand for five days. Thereafter, add cinnamon sticks and leave the mixture to stand for another seven days. Combine sugar and water to make a syrup and add to the mixture, allowing it to sit for another two days. Strain out the spices before serving.

2. To prepare the cocktail, pour all ingredients for the cocktail into a mixing glass and stir for about half a minute. Empty cocktail into a rock glass with ice and twist fresh orange peel over the rock glass for the zest. Garnish with orange peel.
