We've seen many breakthroughs in the food scene, but one particular bracket — baking — have far surpassed common expectations back when it was simply seen for whole buttercream cakes and Betty Crocker cookies. Evidently more so in the last year during the circuit breaker, with the entire nation going into a frenzy for intricate bakes and DIY-starter sourdough kits.
From there on out, it has been an upward tick in artisanal bakeries sprouting up one by one, debuting one-of-a-kind specials that's unique to their own brand. Their commonalities? Limited quantities, rave reviews, and understandably, snaking queues, especially on the weekends. Below, we list the spots on our radar.
This humble shop, hidden within Tanjong Pagar, serves mainly as a takeaway bakery with limited seating both indoors and outdoors. Their bakes are all fully prepared in-house with an artisanal approach that includes pickling, preserving, and fermentation for an extended period of time to achieve the perfect final products. It's no surprise that sourdough loafs are their specialty here — so be sure to get some while you're there.

This little hole-in-the-wall bakery is one of Singapore's best-kept foodie secret. Located near Chinatown, this little bakery is a place you will be willing to brave the long queue for. While there is no fixed menu, a surprise awaits you every time you visit. While everything is fantastic there, their brownies are definitely not to be missed.

Many would know Le Matin as the online Instagram sensation that blew up over the circuit breaker last year, with its main man, chef Mohammed Al-Matin (from Noma and previously, Restaurant Andre) at the helm. The brand recently opened their first test kitchen at Raeburn Park recently — mainly functioning as a takeway bakery with a couple of lmited seats along the common walkway. If you can get your hands on it, have a taste of their signature Kouign Amann or if you fancy something simpler, their Sourdough Croissant.

Recently fronting a brand new home at Jalan Kledek, we're chuffed that Mother Dough has found a bigger space, which can only mean more bakes to come forth. Their sourdough loaves are baked in house daily; as well as a plethora of tasty sweet bakes, such as their cookies and the heavily-raved-about almond croissants, which are crazy buttery and delicately flaky.

This hidden Gem in Joo Chiat produces some of the best croissants in Singapore. Produced in small amounts daily, they sell out in a blink of an eye, which isn't a surprise given how long the queues on weekends extend to. These baked goodness are made free of any improvers, artificial flavouring and preservatives. The croissants are light, buttery and flaky, and best to be eaten when it is fresh out of the oven. While croissants are their speciality, do give their other bakes a try, like the pain au chocolat and cinnamon buns.

With the aroma of freshly baked goodness surrounded by aged wooden furniture, a whiff of this cosy French bakery, and you will be transported to France. Be sure to go early because their delicious food sells out in a flash. Try out their well-known Macaroons available in many scrumptious flavours like rose, chocolate, hazelnut and lemon. Other than the Macaroons, have a taste of their many mouthwatering sandwiches.
