Cocktails and seafood at Gibson

For a bar that doesn't take itself too seriously, Gibson impresses with a strong showing of innovative cocktails paired with seafood plates

Indra Kantono and Gan Guoyi, the founders of Sugarhall and Jigger & Pony, have opened a new cocktail bar and no, it isn't sitting on Amoy Street. Gibson, which occupies the second floor of a shophouse along Bukit Pasoh, is in some ways the bar Kantono and Gan had initially envisioned Jigger & Pony to be. It's a smaller outfit that sits 36 and the handsome space channels plenty of Wes Anderson vibes. Think marble tables, a bar backdropped with tessellated stained glass, and vintage glassware the duo carted back from the United States. We love how Gibson doesn't quite take itself too seriously. You'll find the bartenders in bermudas and bow-ties, and if you're lucky, Bar Programme Director Aki Eguchi himself in floral bottoms.

If you're guilty of overloading on those addictive tapioca chips at Jigger & Pony, don't expect to find them here. The cocktails here are designed to pair with a seafood menu comprising the likes of crudo, tartare, and ceviche. Apart from the towering seafood platters, everything else strays from the canon of classical seafood fare. A lobster ceviche doesn't get the usual stinging hit of acidity from lemon or lime. Instead, apple puree and pickled radish lend a softer hint of acidity while house-made almond milk amplifies the sweetness of the lobster. Scallop crudo, featuring fresh hokkaido scallops, is dressed in a brown butter sauce. It's an unexpected flavour pairing that pays off, and we'll certainly be calling for seconds.

Be sure to line your stomach well because you won't be stopping at just one cocktail. Whether you're looking for a classical rendition of a Gibson or more innovative concoctions, you'll find both territories well covered. Take for example the Laid Backer, which layers cold-brewed coffee (using a base of coconut water) with tequila, salted-vanilla syrup, and pandan bitters. Engineered with top-shelf spirits, the cocktails here are well-balanced, finely tuned, and some of the best in the neighbourhood. Gibson's a bar to watch and you'll want to get here before it starts to fill up.
