The first bite of any good chocolate bar should leave you with the euphoria of a child — that wide-eyed nod of approval as your taste buds are awakened to a combination of flavours and textures never known before. And then, you take a second bite, and long for a third, and before you know it, it's gone.
I found my holy grail of chocolate not long ago. It arrived, like any good stork would deliver it, in a bright yellow padded bag from Hello Chocolate Asia. Upon prying it open, I was greeted with a bar of chocolate wrapped in chic brown paper and a distinctive green label which read 'François Pralus Barre Infernale Pistache'. The only word I recognised? 'Pistache' — yes, 'pistachio'.
It was mind-blowing. Pralus Chocolate, owned by François Pralus, is a French bean to bar chocolate maker (which means every step of the process is done by them) that merges the fruitiness of Madagascar cacao beans with the richness and nuttiness of its pistachio praline centre. The thick layers of dark chocolate unfurled like smooth cream on my tongue, while whole crunchy pistachios burst through the rich pistachio nougat for a decadent finish. Pralus' creation was intense and heady, yet made complete sense. Needless to say, it didn't take long for the 160g bar to be demolished.
The secret behind Pralus' divine chocolates? Each bar is made from dried cocoa beans that he receives from the best cocoa plantations all over the world, or from his very own cocoa bean plantation in Madagascar. Pralus is also known for his range of single origin chocolate bars, including his zero sugar "Le 100%" Criollo.
Designated the dessert person at your next dinner party? This is the ultimate game-changer. One to impress the bosses? There you go. While it's a tad on the pricey side, it's definitely worth its weight in a dark chocolate and pistachio combination that you'll remember forever.
