The hustle and bustle at the wet market. And not just any wet market but one of the world s largest fish markets - Toyosu Fish Market (corner Tsukiji Market). The sights, sounds and smells of fresh seafood! I was relishing in that moment. A rush of adrenaline witnessing the massive array of seafood right in front of me, mostly alive. It almost felt like a dream! This definitely wasn t a place anyone could walk into. He s the 4th generation Sushi chef of Matsunozushi established in 1910. I learn ways to selecting the freshest ingredients is not just by experience but by establishing trust and friendships built along the years! It dawned upon me how some traditions must stay and can t be neglected. The mastery of selecting the finest tuna was based on who the fisherman was.
