My ideal brunch playlist consists of Motown songs and old-school funk with easy-going songs that soothe hangover headaches or make guests want to drink more! I love filmmaker Quentin Tarantino's old films and the soundtracks inspire me a great deal. I've built my music library around my personal taste and other great oldies that never go out of style.

'Uptight' by Stevie Wonder is one of his most popular early singles. Its catchy beat, upbeat lyrics and blasting trumpets will surely boost everyone's mood on a Saturday or Sunday morning. 'Funky President' by James Brown is an iconic funk tune and a must-have in my brunch playlist. It channels the laid-back, social vibes of SKAI and perfectly syncs with a cocktail or two!

The deep bass in 'Funky Night Club' by The Soulsation is the ultimate soundtrack to a boozy brunch. Friends, food and funk  how else would you want to spend your weekend? Watching the city from above, Jack Johnson's mellow track, 'Banana Pancakes' is the perfect soundtrack for drifting in and out of a food coma  I usually save this one for the end of our Sunday brunch service.

'Let's Get it On' by Marvin Gaye is another slower Motown song, one for all the lovebirds relishing their weekend wind down time with each other.

Executive Chef Paul Hallett helms the brand-new SKAI, bringing to the fore an exquisite, modern grill offering at the lofty dining destination on the 70th floor of Swissôtel The Stamford. Pairing the unparalleled views of the city skyline with a curated selection of prime beef cuts and fresh seafood infused with a delicate Japanese touch, Chef Paul's signature culinary style, philosophy and techniques are showcased in SKAI's contemporary and casual setting. SKAI has recently launched their brunch, served every Saturday from 12.00pm - 3.30pm and every Sunday from 11.30am - 3.30pm.Highlights include the succulent Wagyu Beef Tataki with pickled eryngii and ponzu; as well as the mouth-watering Black Cod Fish accompanied by potato and sweet corn. Equally impressive are the eye-catching desserts by Chef Koo Jee, Winner of the Singapore Pastry Cup 2018.
