Pollen by chef Jason Atherton opened its doors on our sunny isle back in 2012, its reputation preceding the launch given that it takes inspiration from Atherton's Michelin-starred London bistro, Pollen Street Social. This year, the go-to spot for fine dining turns three, and Executive Chef Colin Buchan's five-course tasting menu marks the occasion. Also noteworthy is the restaurant's continued dedication to showcasing British cuisine while incorporating Asian influences into the mix.

Pollen turns three: Executive Chef Colin Buchan’s anniversary tasting menu

The anniversary tasting menu has a light and refreshing palate that suitably echoes the temperate Flower Dome in which the restaurant is housed, and the second course of raw Hokkaido scallops turned out to be the pièce de résistance. The pristine sweetness of the scallops were superbly balanced by the dashi jelly, and the mild sharpness from the wasabi and avocado purée helped to round off the delicate flavours of the dish.

Other dishes include burrata with heritage tomatoes; roasted hake; and rump of lamb accompanied by asparagus, wild garlic and white onion purée. The menu ends with a tangy and surprisingly light crème catalan, an enjoyable treat that hits the sweet spot without venturing into overly cloying territory. 

The anniversary tasting menu is available for dinner from 29 June to 31 July, from 6pm to 10pm, at $160++ per person, or 300++ per person with wine pairings
