Farewell db Bistro Moderne, hello db Bistro & Oyster Bar
Chef Daniel Boulud has added an oyster bar to his restaurant empire and it can be found right here in Singapore. Nope, Boulud hasn't opened a second restaurant in our city; following a recent revamp which saw db Bistro Moderne sprucing up its space to welcome an oyster bar, the restaurant has taken on a new name — db Bistro & Oyster Bar.
Speaking about the revamp, Boulud said: "Seafood has been one of the most popular items at db Bistro over the past few years. Keeping the customer in mind, we've decided to expand the seafood menu and reflect that in our restaurant branding."
In addition to the slew of Parisan bistro favourites and New York-style burgers that have found pride of place on the menu, the revamped menu brings with it plenty from the sea. Expect to find freshly shucked French and American oysters alongside Maine lobsters and Alaskan king crabs. Apart from a daily selection of crudo and ceviches, you'll find seafood-centric dishes ranging from a classic shrimp cocktail to crowd-pleasing lobster rolls. Seasonal dishes such as whole-roasted Mediterranean seabass and Boulud's signature octopus 'a la plancha' — featuring tender hunks of octopus cooked on a metal plate — also make their appearance on the menu.
Watch Boulud himself introducing The Royal Platter, a dish from the new menu:
