When was the last time you rocked up at a kelong to lie back in a hammock and watch the sun set over the water? It's a throwback to simpler days, where Netflix or Snapchat didn't necessarily feature in the agenda. One thing still remains — the kelongs dotting Singapore's waters continue to rake in their fresh haul of seafood, but this time around with a more diverse catch.
Consider Ah Hua Kelong, a fish farm sited off Changi and Sembawang. Beyond the usual suspects of grouper and sea bass, these guys also offer sweet clams, mussels, wild stingray, and even oysters. Besides offering a home delivery service, they also share recipes on their website, providing all the ammo you need to whip up a meal at home.
If you've been burnt by one too many botched cooking experiments, leave the culinary experiments to the pros. On 4th and 5th July, Alex Phan, executive chef of Restaurant Ember will roll out a five-course dinner featuring Ah Hua Kelong's daily haul of seafood. Think XL clams paired with sweet potato noodles and coriander; seabass given a tangy makeover with assam; and grouper presented with tomatoes, scallion, and salted plums. The boys from the kelong will be present at dinner as well, so it's the perfect time to pick their brains about seafood, kelong life, and everything else in-between.
