Over at Zouk watering hole Red Tail, going blonde does have its perks. We're talking about their Bamboo Blonde cocktail, of course, which combines bright citrusy flavours with the warming heat of ginger and a good slosh of Brazilian rum. Enjoy it with a gloriously messy Kurobuta pork and cheese sandwich.


Here's what you need

  • 45ml Leblon Cachaća
  • 20ml Fresh lemon juice
  • 10ml Homemade ginger syrup 
  • 10ml Crawley's Orgeat syrup 
  • 5 Fresh basil leaves
  • 1 Dry lemon wheel

How to make it:

  • 1. In a cocktail shaker, shake all ingredients, apart from the basil leaves and lemon wheel, with ice. Strain over a highball glass topped with fresh ice. 
  • 2. Garnish with basil leaves and dry lemon wheel.
