It has been a busy year for the F&B team over at Ritz-Carlton, Millenia Singapore. Following the opening of Colony earlier in September, the hotel is now ready to unveil its final surprise for the year — Summer Pavilion, the property's flagship Cantonese restaurant which opens its doors today after an eight-month-long renovation.
It's easily one of the most handsome Chinese restaurants around. Designed by Tony Chi & Associates, the contemporary interiors weave in touches of Chinoiserie. You ascend a flight of steps set within the grounds of a modern Chinese Garden to enter an abode of quiet sophistication. Once inside, white lacquer and floral motifs play off against vitrines filled with fine tea accoutrements sourced by Tea Bone Zen Mind.
With Executive Chef Cheung Siu Kong at the helm, expect to find Cantonese cuisine presented with contemporary flair. We visited the restaurant before it opened to the public and tucked into dishes that were masterfully executed and beautifully presented. There was deeply comforting double-boiled bird's nest nestled in sea cucumber, South African Abalone braised till tender, and sweetened almond tea custard set atop black sesame. Choose to pair your meal with fine wines from the restaurant's impressive wine list or opt for a warming cup of tea from Tea Bone Zen Mind.
If first impressions are anything to go by, Summer Pavilion's return to the dining scene should give other Cantonese restaurants good reason to sit up and take notice.
