Hairy crab are back in season and the award-winning Cantonese restaurant Hai Tien Lo will be serving them from 12 October to 29 November.
When it comes to this seasonal delicacy, it's the female crab you want to look out for. Besides proffering sweet, luscious flesh, their rich creamy roe makes them ripe targets for the discerning gourmand.
At Hai Tien Lo, Executive Chef Lai Tong Ping will showcase the versatility of the hairy crab in a variety of ways: steamed with perilla leaves; braised in homemade beancurd, and served as a xiao long bao — but one filled with minced pork, hairy crab flesh, and roe. Love seafood? You're in for a treat: Boston lobster makes an appearance with egg white, crab meat, and crab roe. You can choose to order each of the eight hairy crab dishes as a la carte items or go the whole nine yards with a six-course set that throws the spotlight on hairy crab in all its glory.
