For Chef-patissier Pang Kok Keong of Antoinette, his obsession with matcha has birthed a mind-boggling array of 22 edible masterpieces that showcase matcha against a canvas of savoury dishes, cakes, pastries, and confectioneries.

Imagine a classic strawberry shortcake given a good dose of matcha in its sponge layers, lending a light, earthy bitter note to complement the sweet, juicy strawberries within. Then there's French toast shot through with matcha, beautifully paired with vanilla Chantilly and lashing of maple syrup. Opt to wash down these tasty treats with what else but such matcha-infused beverages as matcha iced tea dotted with yuzu zest and fresh lychee.

From now till end July, you'll find these matcha dishes sitting on the a la carte menu at Antoinette. Given Pang's insistence on using only premium ingredients in his creations, you'll taste only matcha powder from Nishio, Japan, in his dishes that celebrate this enigmatic green powder.
