Now well into its 7th edition, the Bacardi legacy competition sees bartenders all over the world concocting cocktails sans fancy ingredients or equipment to produce a new classic that will hopefully find its place in bars the world over. 

For the competition, Stuart Danker, Principal Bartender at Sugarhall crafted a masterpiece inspired by his grandmother (Rosa). The cocktail features plenty of fresh, bright flavours derived from passion fruit and lime.

Here's what you'll need

60ml Bacardi Carta Blanca

20ml Passion fruit syrup 

10ml Fresh lime juice 

20ml Egg white 

3 Dashes of Angostura bitters

Mezcal spritz 

 

How to make it

Combine all ingredients in a shaker and shake to combine. Chill the mixture. Before serving, pour the mixture into a cocktail glass and finish with a spritz of mezcal.
