1. Foie gras with coffee caramelised banana

Here's what you'll need

1 shot of Nespresso Fortissio Lungo Grand Cru

1 slice of ginger cake or ginger bread

1 banana

100g foie gras terrine (at room temperature)

50g butter

20g sugar

10g almond nibs

How to make it

1. To prepare the foie gras mousse, blend the foie gras terrine with butter before transferring it to a piping bag with the desired tip. Let it set in the chiller.

2. For the caramelised banana, melt the butter over medium-high heat and add sugar after. As the sugar turns yellow, lay the banana slices in the pan. 

3. Cook the bananas for 20 seconds before adding a shot of the Nespresso coffee. Turn the bananas carefully and cook for another 10 seconds. 

4. Meanwhile, roast the almond nibs.

5. To assemble the dish, cut the ginger cake/bread into a circular disc and top with a slice of banana, foie gras mousse and almond nibs. 

 

2. Gratinated coffee duck sandwich

Here's what you'll need

1 shot of Nespresso Dulsao do Brasil Grand Cru

1 slice of bread

30g smoked duck breast

5g pistachio

5g dried apricot

Chicken liver mousse

Kahlua 

How to make it

1. Mix duck meat with chopped pistachios, dried apricots and Nespresso Dulsao do Brasil Grand Cru.  

2. Add meat to bread and roll them together. 

3. Add smoked duck to the middle of the bread roll. 

4. Bake in the oven for 10 minutes at 180 degrees Celcius.

5. Remove the bread rolls from the oven and top each roll with chicken liver mousse and kahlua. 

 

3. Coffee smoked-duck roll stuffed with biryani rice masala

Here's what you'll need

1 Nespresso ristretto origin Indian grand cru

150g smoked duck breast, sliced

200g biryani rice

1 tbspn masala spice powder

1 tbspn mayonnaise

How to make it

1. In a mixing bowl, combine the rice, masala spice, mayonnaise and Nespresso ristretto. 

2. Shape the rice with your hands to the desired shape and wrap the rice mound with smoked duck.
