Timber walls, dark gleaming marble and handsome pendant lights deck the space where Olive Tree used to be. Welcome to Ash & Elm, InterContinental Singapore's latest dining outlet which feels very much like the more worldly, cosmopolitan cousin of Olive Tree. Like its predecessor, Mediterranean blood continues to course through the veins of the restaurant, but the chefs here don't have to be confined by traditional fare.
The classic wood-fired oven here is put to good use, turning out beautifully baked flat breads topped with a riot of ingredients. Our vote goes to the pumpkin and bacon flat bread which sees Mascarpone and Parmigiano Reggiano cheese blanketing it all.
Burratina is served on a bed of fresh, almost meaty heirloom tomatoes. A house-made basil pesto makes for a classic foil to the creamy burratina.
Ash & Elm also makes an effort to put sustainably sourced seafood on the plate. Call for the Tasmanian salmon fillet, masterfully grilled on a metal plate and sided with mixed vegetables.
For dessert, Escoffier's classic peach melba dessert takes a contemporary turn with a ruby peach parfait, almond-strawberry genoa bread, and strawberry tuile. While the Yuzu-Citrus Combination doesn't go by the sexiest name, it pulls together a winning mix of yuzu curd, lemon sable breton, and mandarin orange reduction. Its fresh flavours make for the perfect ending to a hefty meal.
