Love it or hate it, durian-inspired treats are back
Is there a more divisive fruit than durian? The spiky, tropical treat is at once one man's hell and another man's heaven.
Brave souls have tried to pair this pungent fruit with wine, only to conclude that the fruit's strong, lingering flavours completely obliterate the delicate dimensions of wine. Not even the boldest reds can stand up to the King of Fruit.
It's no wonder durians are banned from buses and trains in Singapore. Its arrival tingles the nose long before the eyes can register its presence.
For the chefs over at Goodwood Park Hotel, working with durians are but an exercise in creativity. For the past 34 years, the culinary team has turned out all manner of durian-inspired treats to sate the cravings of durian fans across the island. This year, they're working with premium D24 and 'Mao Shan Wang' durians to roll out 14 durian-fuelled treats. While perennials favourites such as the D24 mousse cake and D24 puffs remain, newfangled creations ride on the popularity of ingredients such as matcha and salted caramel to birth flavour pairings that — against all odds — work beautifully.
